Pumpkin Chocolate Chip Muffins (Paleo, THM Friendly, Dairy free & Gluten Free)


Ingredients
  • 1 Egg 
  • 1 Cup of Pumpkin
  • 1/2 cup of Coconut Oil
  • 6 TBSP of Trim Healthy Mama Gentle Sweet or 3 TBSP of THM Sweet Blend (Alternatives to THM Gentle Sweet include: 1 cup of Xylitol or Erythritol or a mix of the two, Swerve; Alternatives instead of THM Sweet Blend, include Truvia or any other stevia blend) This replaces what would be 1 cup of Sugar
  • 1 1/2 cups of Gluten Free Flour Blend
  • 1/4 tsp of Baking Powder
  • 1/2 tsp Baking Soda
  • 1 1/2 tsp Pumpkin Pie spice (this can be left out if desired but adds a nice flavor)
  • 1 1/2-2 cups of Chocolate Chips (for THM followers 60% cocoa +, Lily's Chips, Enjoy Life Chips-Paleo friendly option considered a THM crossover 
  • 1/2 cup of nuts *Optional
DIRECTIONS:
Pre-Heat oven: 400 Degrees, 
Mix Pumpkin, Sweetener, Egg & Coconut oil  together well. Then add the rest of the dry ingredients and  mix together nicely. Fold in the nuts and  chocolate chips. Fill Muffin Liners 2/3 full and bake for 20-25 minutes. 

Tip: when using gluten free flours that contain coconut flour or entirely coconut flour, coconut will suck up moisture. So adding a little more pumpkin or an egg or two, or some that follow THM trying greek yogurt. You are after a texture of slightly softer than cookie dough texture for these muffins :)
When baking these as muffins they won't puff up huge like a regular muffin, they will a little and have the same nice texture of a muffin.
 

*Edited this to add my friend that is following a Paleo diet tried this recipe and used just coconut flour in her's, this dough is versatile enough you could even turn it into a cookie. She does not time her recipes :) so I would start with 8-10 and see how they are if baking as a cookie.

Both my girls and husband loved these! I have newly started Trim Healthy Mama and I am trying to learn new recipes lately and these were excellent! They are so good you wouldn't even know they were sugar free! I used Trim Healthy Mama Gentle Sweet, it has little to no aftertaste at all, even my husband agrees. For those using THM sweet blend, there can sometimes be a slight stevia aftertaste, but not over powering. Gentle Sweet has been the best to bake with for me. You can also make your own Gentle Sweet by mixing one cup of Xylitol with one cup of THM Super sweet blend, pulse in a blender for a little bit to mix it together and then store it in a jar or container. You can also buy all the components of Super Sweet Blend and entire make your own Gentle Sweet as well.
